I
love these tasty veggies, full of flavour and good addition to any meal. I
usually batch cook this recipe, have it for dinner as a side to salmon, veggie
sausages and then mix it with rice or on a bed of kale for lunch the next day.
Ingredients:

butternut squash
1
can of chickpeas
About
6 cherry tomatoes

red pepper
1
red onion
Drizzle
of olive oil
Pinch
of Salt
½
teaspoon of pepper

teaspoon of turmeric
1
teaspoon of cumin seeds
Method
It is such
an easy recipe! Preheat oven to 200ÂșC and simply peel and chop up the butternut
squash and onion. Half the tomatoes and chop up the pepper. Mix them up on a baking
tray with the olive oil, salt and pepper, to season. Then add the chickpeas and
again mix everything together this time adding the turmeric and cumin seeds.
Bake
this for approx. 30mins until everything is soft and very slightly browning at
the edges.
